Happy Monday and I hope all of you had a wonderful weekend! We usually reserve Friday and Saturday nights for dining out, and this weekend was filled with some especially delicious food. On Friday night, at the suggestion of some local friends, we drove about a half hour south to the town of Ariccia to try their local specialty: pork. From porchetta (roasted tenderloin), to proscuitto, jerky, sausage, and more cured styles, this is a pork-lover’s paradise, and despite the fact that every restaurant in this area serves the same dishes, somehow they all manage to stay busy! I’m not a huge fan of pork, but I did try most of the meats, and I have to say they were surprisingly tasty. We ate in traditional Italian fashion, sharing all the dishes, and between the wine, aperitivo, pasta, and dessert, it was nearly a four hour affair! On Saturday, we had dinner at our favorite Sicilian restaurant, which had just reopened after their Ferragosto holiday.
